Chocolate Olive Oil Cake

Love this cake because it's practically one bowl and comes together really fast.  I generally use dark cocoa powder and chocolate chips, but in this coronapocolypse, I only have regular cocoa powder and can't be frivolous with the chips, so we've gone without. 

1/2 cup olive oil
1 cup buttermilk
1 cup brown sugar
1/2 cup sugar
1 egg
1 tsp vanilla

1 1/2 cup ap flour
3/4 cup dark or cocoa powder
1/4 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 cup chocolate chips


Preheat oven to 350.  Grease and line a loaf pan with parchment paper.  Set aside.

Whisk to combine the olive oil through vanilla in a large bowl.  In a separate bowl, whisk the flour through the salt together then add to the olive oil mixture.  Fold the dry ingredients into the olive oil mix using a spatula.  Do not overmix.  Pour into the prepared loaf pan and bake about 60 minutes or until a toothpick comes out with just a few tiny crumbs. 

To serve, drizzle with olive oil and sea salt, or go all out, add a scoop of good quality vanilla ice cream and drizzle that and the cake with olive oil and sea salt.

Hi Jess, What does ap flour mean? Also do you think Almond Flour would work? Looking forward to making this bread!

Hey Michelle,
AP is all purpose. I don't think almond flour would work out that well...it doesn't have any gluten which gives structure and texture to this cake. With almond, the texture would be all weird and probably quite dense.
