Granola

Homemade granola is not fussy. Don’t bother to measure anything, just grab a couple of handfuls of your favorite nuts or seeds, combine with some oats, olive oil and a touch of maple syrup for sweetness. Serve with yogurt and fruit.

a handful of some of the following, chopped:

pecans
almonds
walnuts
hazelnuts
pepitas
pine nuts

Combine in a bowl with a good sized handful of rolled oats. Drizzle with olive oil and about a tablespoon of maple syrup. Stir to combine. Dump it all onto a parchment lined sheet pan and bake for about 20 minutes or until it all turns golden.
